BBQ chicken goujons
I have very vivid memories of me, around five or six years old, pleading to go to McDonalds for a Happy Meal. My poison of choice would be the chicken nuggets. Little pre-shaped lumps of god knows what, deep fried to oblivion and drenched in lashings of sugary ketchup. Fast forward 25 years and I’m now slightly more fussy about what goes in my mouth. However, if you are feeling slightly nostalgic, these are just the ticket.
You can nibble away on these guilt free and feel not a shred of embarrassment or shame. The spicy BBQ flavour also transports them into adult territory. Might not be a Happy Meal, but your tummy will surely be a lot more enthusiastic.
2 large chicken breasts, cut into thin strips
100g dried breadcrumbs
1 tsp dried chilli flakes
1 1/2 tbsps pre-mixed bbq spice
2 eggs, beaten
100g plain flour
Mayonnaise, to serve
Preheat the oven to 190˚C. Mix the breadcrumbs, chilli flakes and bbq seasoning in a shallow bowl. Season, to taste, with salt and freshly ground black pepper. Place the flour in another shallow bowl. Dip the chicken pieces in plain flour, then in the beaten egg and finally coat in the breadcrumbs. Shake off the excess and lay the chicken goujons on a non-stick baking tray.
I like to cut my strips very thin for maximum crunch and they generally only need 15-20 minutes cooking time but if you have gone for chunkier strips you will need to increase your cooking time accordingly. Just keep an eye on them to make sure they don’t burn. These goujons are quite fiery so I serve them with mayonnaise to tame the heat slightly.
