Honey Soy Chickpeas

The humble chickpea is a delightful little thing – you can roast them, fry them, boil them and puree them. You can add to them a multitude of flavours, both savoury and sweet. I’m their number one fan, in case you hadn’t noticed. If you have a bad case of the munchies, and you need a quick and delicious snack that is super-duper healthy, this is the chap for you. Use this recipe as a jumping off point and experiment with different flavourings…

Ingredients

400g tin of chickpeas, drained

1tbsp vegetable oil

1tbsp soy sauce

1tbsp honey

Method

Drain your chickpeas. Heat the vegetable oil in a large frying pan and stir in the chickpeas, along with the honey and soy sauce. Cook for 5 minutes, stirring throughout , making sure that they don’t burn. When the sauce thickens and starts to go nice and sticky, you’re good to go. Serve while still hot (although they are also really yummy cold) and snack away, guilt free.

Serves 1-2 as a snack
