Maple Dijon Chicken

If you’re serving this up to guests, tell a little white lie and say this dish took hours of marinading and preparation. It’s so damn good they’ll believe you. They don’t need to know that it took less than 60 seconds to put it all together and throw it in the oven. I won’t tell if you don’t!
3-4 chicken breasts (Allow 1 breast per person. If cooking more than 4 breasts, double the sauce quantities)
1/4 cup maple syrup
1/4 cup Dijon mustard
1 tbsp red wine vinegar
Sprig fresh rosemary
Season the chicken breasts with salt, pepper and garlic powder before arranging in a single layer in an oven proof casserole dish. Mix the maple syrup, Dijon mustard and red wine together in a bowl before pouring over the chicken breasts. Scatter over some fresh rosemary that has been roughly chopped then bake, uncovered in the centre of a pre-heated oven for 25 minutes at 200˚C.
After 25 minutes, place under the grill part of your oven for 5 minutes until the chicken and sauce and golden and bubbling.
Serve up with freshly steamed green veg and rice with some extra sauce spooned over the top. Simply delish!
