Sweet potato fries
Who needs regular fries when you can have gloriously spicy and smokey sweet potato fries instead. These are almost too simple to throw together and deliver on taste every time. The additional of garlic powder and smoked paprika takes them to a whole new level of yum that the humble potato could only dream of. And best of all, they’re super healthy! It would be rude not to…
2 large sweet potatoes (allow 1 per person)
1 tbsp vegetable oil
1 tbsp garlic powder
1 tbsp smoked paprika
Freshly ground black pepper
Preheat your oven to 180˚C. Use a vegetable peeler to peel the skin from the sweet potatoes. Use a sharp knife to cut the potato into 1cm square batons (or bigger if you prefer chunkier fries).
Spread the cut sweet potato batons on a large baking tray in an even layer then toss with the vegetable oil to ensure they are thoroughly coated. Sprinkle over the garlic powder and smoked paprika then season well with salt and freshly ground black pepper. Use your hands or a spatula to toss everything and make sure the seasoning is evenly covering the sweet potato.
Cook in your preheated oven for 20-25 minutes, turning halfway through. The fries should be crunchy and slightly caramelised on the outside and be light and fluffy inside.
Serve up with a dip of your choice. Mayonnaise, blue cheese and sweet chilli sauce all work really well with the sweet potato.
