Healthy turkey koftas




In my quest for healthy eating this week, I purchased some turkey mince for a wee change. I was then slightly stumped as to what to do with it. I toyed with the idea of burgers or meatballs then at the last minute had a bit of a brainwave to try and make some Moroccan inspired koftas.

Now I would usually use lamb or beef mince to make kotfas but thought I would give the turkey a go. Well I can tell you, I was really glad I did – they were delicious and a wonderfully healthy dinner too. These chaps are definitely getting added to my dinner repertoire and I might even make them again for dinner again this week.

Ingredients

Koftas
500g minced turkey thigh meat
100g dried breadcrumbs
½ red onion, finely diced
½ red pepper, finely diced
1 tsp mixed spice
1 tsp tumeric
1 tsp onion powder
1 tbsp Moroccan spice mix
Salt Pepper

To serve
Spinach leaves
Natural yoghurt
Honey
Flaked almonds

Method

To make the turkey koftas, combine all of the kofta ingredients in a large mixing bowl then use your hands to form into kofta or sausage shapes around wooden bbq skewers. Place the skewers under a hot grill and cook for 20 minutes, turning occasionally until the koftas are cooked through and golden brown.

Serve them on a bed of spinach or salad leaves with a good drizzle of natural yogurt and honey then sprinkle with some flaked almonds. How easy is that?

Makes 6 large koftas (serving 2-3 people)
