Rocky Road

Chocolate is a promiscuous lady – she goes with anything – and Rocky Road is a great little recipe that best illustrates this very point. You can throw this together if you have a spare 15 minutes – it’s really fun to make and amazingly easy – so get the kids involved if you have them.

Be adventurous with the ingredients – use the chocolate/butter/golden syrup  mixture as a base then throw in whatever floats your boat – nuts, dried fruits, marshmallows, jelly beans, malteasers, honeycomb, biscuits etc.


250g unsalted butter

100ml golden syrup

400g dark chocolate, broken into pieces and melted in the microwave

150g mini marshmallows

200g chocolate covered peanuts

150g chopped up turkish delight

140g chocolate covered honeycomb pieces


Break up the chocolate into squares in a large microwavable bowl and microwave for 30 second bursts at a time, until it is fully melted. Be careful not to overheat or the chocolate will burn and go grainy. Meanwhile melt the butter and syrup in a small saucepan. Once the butter mixture has melted, pour it into the bowl with the melted chocolate and stir to combine.

Add all of your other ingredients and stir well so the chocolate mixture coats everything. Get a large rectangular baking tray and line with greaseproof paper. Pour in the rocky road mixture and use a spoon to spread it out evenly. Pop it into the fridge for 1-2 hours until it has gone hard. Using a very sharp knife cut into 2 inch squares and serve.

Makes roughly 24 squares
